Scout Notes:Prediction: Giberth's sits on the one the hottest blocks of 2013. This Dogpatch spot already has Serpentine and Mr. & Mrs. Miscellaneous as neighbors, and the new Magnolia brewery is moving in as well. And Gilberth's is the newest must-try destination on the street. Open just 5 months, it's the brainchild of husband-and-wife team Gilberth and Julie, who've created a sophisticated yet playful new space and menu that brings something new to the table (pun intended). Walk into Gilberth's and you'll notice polished concrete floors, exposed brick and a giant copper canvas graced with a strutting rooster. Like much of 3rd Street, Gilberth's is part of a warehouse and they wanted to showcase the industrial chic in their interior. Cloth napkins and mason jars give the bright space a cozy touch. But the really feel good vibes begin when the food starts coming out. Gilberth hails from the Yucatán and Julia is from El Salvador, and they've infused their menu with Latin flavors and hard-to-find proteins like ostrich, wild board and alligator. For less adventurous eaters, there's also plenty of pork, lamb and their special rotisserie chicken, all sourced from local vendors and nearby farms. They put an emphasis on working with the rest of the neighborhood, sourcing ice cream from Mr. & Mrs. Miscellaneous, seafood from i love blue sea, and meat from Olivier's Butchery—all Dogpatch businesses bringing new energy into the neighborhood. And the attention to getting the best fresh and local ingredients shows in delicious dishes like the wild boar piccadillo empanadas, guava glazed baby back ribs and hamburger with lamb and homemade chorizo.
