Hearty burgers deliver 8 ounces of wholesome local grass-fed beef, vegan patties of chickpea and Indian spices, or cutlets of tender chicken grilled by blowtorch and topped with an edible solder of cheddar and jalapeno. As diners enthrone themselves upon luxurious, high-backed black leather chairs at marble-top tables, they eagerly divvy up tapas of hummus and lightly breaded calamari or share bowls of mussels stewed in potent broths of vermouth or white wine.
