Any good cooking class ends with a lavish meal, but Kaz Matsune of Breakthrough Sushi is taking it a step further. During his two-hour tutorial, you'll get to create innovative sushi during an Iron Chef-like challenge ($90). Appetizers and drinks are included in the events, which are hosted on August 11 and August 18 from 3:00 to 5:30 p.m.At the modern Kvänum kitchens across from the Transamerica Building, your class will start with an Momokawa organic-sake mojito and an assortment of appetizers, including edamame salad and smoked salmon with cream cheese and cucumber. After a brief sake-cocktail lesson, Kaz will lead an hour-long demonstration on basic sushi-rolling techniques using organic ingredients and premium fish; you'll learn about making sushi rice, how to handle a sushi knife, and how to cut vegetables and fish. The chef will teach you how to make a classic California roll and then three more kinds of sushi to go beyond the basics: temari (hand-formed rice balls), oshi (wood-pressed blocks), and chirashi (a bowl of rice topped with sashimi).Your team will show off its skills during an Iron Chef-style competition: Kaz will provide you with a set of ingredients—past classes have seen kanpachi (amberjack) and escolar (butterfish)—to transform into a creative concoction. Kaz again becomes the focus as he presents traditional and new styles of sushi-making, using organic and sustainable fish whenever possible. You'll take home a gift bag with a sushi kit, new knife skills, and the ability to conceive a dish under pressure—just like an Iron Chef.
