At Indigo Food Cafe, raw-food chef and café owner Lovena Galyide orients taste buds toward uncooked fruit, nut, and veggie dishes in an effort to jump-start the body's natural healing process. During the Raw Food for the Beauty class, no more than 20 students converge inside the café and embark on a two-hour culinary tour of gourmet fare devoid of all animal products, wheat, and sugar. Galyide unveils the health benefits and top-hat-decorating potential of figs, coconuts, nettles, papaya, and other vitamin-crammed superfoods. As mouths munch on delicacies such as kale chips and falafel, minds soak up lessons about raw food's potential to balance off-kilter pH levels and discourage inflammation. Budding health gurus also learn how to transform nuts and seeds into creamy beverages and ferment coconut milk into kefir, a yogourt-like drink more wholesome than Michael J. Fox on Family Ties .
